History
ICIF is a non-profit organization founded in 1991 to protect and defend the image of Italian Cuisine and Italian products among professionals who work in restaurants abroad. Since its foundation, ICIF has organized Master Courses (two months of theoretical and practical training at the school, plus a four-month internship period at selected restaurants) and Short Courses (general and themed) for groups of young italian and foreign professionals (Chefs, Sommeliers, Restaurateurs), who want to specialize in Italian Oenology and Cuisine.
Over the years students have graduated from Australia, Bermuda, Brazil, Canada, China, Cyprus, Korea, Philippines, Germany, Greece, Holland, Hong Kong, India, Turkey, Japan, Lebanon, Mexico, Perù, Philippines, Russia, Ukraine, Georgia, Iran, USA, Singapore, Sweden, Thailand, Indonesia, Taiwan, Venezuela, Honduras, El Salvador, Chile, Colombia, Santo Domingo and of course, Italy.
In 1997 ICIF turns a new page in its history by moving its headquarters into the prestigious Castle of Costigliole d’Asti, which had been restored to accommodate the Institute and its training facilities and paid for thanks to a contribution from the European Union, allocated to ICIF by the Region of Piedmont. Adjacent to the classrooms, equipped with state-of-the-art facilities, there is a wine cellar and an oil cellar, where top Italian producers display their products. A modern tasting room is housed alongside. The promotion of our activities and the subsequent recruitment of students occurs thanks to the extensive network of representative offices abroad, currently present in over 27 countries across Europe, Asia, North America and South America.
In 2004 ICIF took a further step forward by expanding its activities abroad, with the opening of two new facilities in Brazil and one in China. The first in the south of Brazil, in the region of Rio Grande do Sul, in Flores da Cunha, created in collaboration with the University of Caxias do Sul. The second in Shanghai, at the university campus Lingang Shanghai Science and Technology School and the third, which opened in 2013, once again in Brazil in Sao Paulo at the Centro Paula Souza.
On March 29, 2014 the Orangerie was inaugurated, a new teaching facility built entirely of glass and metal, with modern classrooms and the latest technology.
