“From the Vineyard to the Glass” – Enography, wine tasting technique and food and wine pairing

Among the rolling hills of the Langhe and Monferrato area, immersed in the pleasant and evocative atmosphere of the Castle of Costigliole d’Asti, inside its historic Wine Cellar, where ICIF has set up a very modern tasting room with a futuristic design, with 20 single multi-functional stations for wine tasting and food and wine pairing, surrounded by a range of hundreds of prestigious wine bottle labels from different regions of Italy, you will be accompanied by a professional Sommelier instructor to discover the world of Italian wines, a world envied by many foreigners and not yet well appreciated by Italians for its potential and organoleptic facets. The program of the ICIF Course on Italian Wines and Food and Wine Pairing provides skills, as well as relating to the specific world of Italian wines through a national overview of the different regions, also related to the restaurant world, in relation to food preparations and suggestions for correct pairings, including guided tests with all the different courses of an Italian Menu, from appetizers to desserts, also including the pairing with cheeses, not only with white wines and red wines, but also with aromatized wines, sparkling wines, liqueurs and raisin wines. The program of the course ends with a field trip to go wine tasting, organized by the Institute at a local winery.

The course is in Italian language and teachers are supported by an interpreter in English language.

  • 5 days of theoretical and practical lessons at the Institute

CERTIFICATE

  • ICIF certificate upon completion of the course (which does not qualify or enable to carry out the Sommelier Profession)

FIRST WEEK - Restaurant Service

Monday
  • Classification of the hospitality industry

  • Commercial restaurant service

  • "Banquet and Buffet" catering

  • The working environments within restaurant dining rooms

  • The dining room brigade

FEE

The fee for the ICIF Course on Italian Wines and Food and Wine Pairing is 1.350,00 Euro.
If the student decides to also buy the ICIF Course for Restaurant Dining Service, a discount of 100 euros on the cost of this Course will be applied.

The fee for the complete course includes:

  • Accommodation at the ICIF’s guesthouse for 2 weeks in small apartments (2-rooms flats with single, twins or triple rooms and one bathroom)

  • Breakfast from Monday to Friday for the 2 weeks course

  • Meals (lunch and dinner) in the school canteen from Monday to Friday for the 2 weeks course

  • A complete chef uniform: jacket, trouser, apron and paper hat

  • Support for the Student Visa application procedure (if needed)

For those interested it is also possible to purchase also single lessons at the following fees:

  • One day lesson (including lunch, dinner and accommodation for 1 night) is of 350 euro per person

  • One day lesson (including lunch and dinner no accommodation) is of 300 euro per person

  • Half a day lesson (morning + lunch or afternoon + dinner) is of 180 euro per person
