The ICIF Course for Restaurant Service, Oenology and Coffee Skills is a full-immersion professional course lasting a total of 8 months, divided into 3 weeks of theoretical-practical lessons at the Institute, and 29 weeks of practical training at Italian restaurants or high-level hotels, selected by the Institute. The course program allows you to learn from the great experts of the sector the best professional service techniques to become experts in hospitality, management, entertainment, customer service with specific fundamental notions also in the oenology, Italian wines and cafeteria sector.
The aim of the Course is to re-evaluate the professional figure of the Waiter, whose task is not only to bring the dishes and pour the wine, but of a real "Guest Manager", who accompanies the customer during the meal allowing him to eat and drink what he wants and spend pleasant moments. The Course provides skills in relation to managerial and relational skills, complemented by knowledge of the world of hotellerie, in relation to gastronomic preparations and suggestions for correct pairings with wine and drinks during a whole week dedicated to Italian national enography, wines and food-wine pairing as well as a whole week dedicated to skills relating to the coffee sector.
The course is in Italian language and teachers are supported by an interpreter in English language.

DURATION
The course has a total duration of 240 days (8 months):
3 weeks of theoretical and practical lessons at the Institute
7 months of internship (optional) in dining room service and cafeteria at an Italian restaurant or Hotel previously selected by the Institute.

THIRD WEEK - Coffee Skills
Introduction to the world of Coffee: Countries of production and varieties (Arabica, Robusta, etc..)
Brief history of coffee: from Yemen to plantations in Sicily.
Coffee tasting session: Arabica and Robusta – 20 minutes
Practical session preparing two French press with one Arabica, one Robusta, explanation of the main sensory differences
Espresso equipment GRINDER and ESPRESSO MACHINE, Correct terminology
Arrangement of equipment, accessories and main ingredients, to promote speed and efficiency (Calibration of a grinder – practice 30 minutes).
Practical sessions on the espresso machine – espresso coffee recipe regulation of the grinder.
Cleaning session – pulyhopper, pulicaff puliygrind
