The new ICIF Pilot Course on restaurant service
WE TEACH PASSION FOR SERVICE, TO BECOME EXPERTS IN HOSPITALITY, MANAGEMENT, ENTERTAINMENT OF THE CUSTOMER SERVICE.
They come from far away, young, enthusiastic, extremely polite and dedicated to discovering a new world and learning a profession from times gone by, which nowadays is often underestimated and lacking in professional skills, not simply Waiter but "Guest Manager" and attentive servant, they are 7 the Filipino students from the De La Salle-College of Saint Benilde in Manila which has already collaborated with the ICIF Institute for 15 years for the training of their students on Italian Cuisine, this time arrived on the hills of Costigliole d’Asti for a first pilot course which includes all aspects of the professional figure of the Dining Room Service.
A well-structured and complete course, a week dedicated to Italian oenology, in collaboration with the Barbera d'Asti and Vini del Monferrato Consortium which kindly provided the wines of their associated companies, for the tastings included in the course, and the food-wine pairings held by the AIS Sommelier Ezio Cravero, a journey completed by visits to some of the most important wineries in the Piedmont area.
A second week dedicated to the world of coffee, with the creator of the "Coffee Flair", Fabio Milani, not only learning the correct techniques for the preparation of espresso, cappuccino and Latte Art, but an innovative proposal that one of Coffee Flair, a new all-Italian figure with knowledge and experience both in the field of flair bartending and coffee, to make tomorrow's professionals increasingly specialized and increase the quality of service to today's customers, who are increasingly attentive and demanding.Finally, the educational heart of the new ICIF training course, a week dedicated to the Dining Room Service, the 7 young Filipino students were guided by a Master with a capital "M", Mauro Prato, specialized in Dining Room, Sommellerie and Bar.
A training course this one of ICIF, not only to discover the techniques of Dining Room Service, from the preparation of the table, to professional ethics, etiquette and welcoming the customer, but thanks to the expert and great professionalism of the teacher, a course of great transmission of human values, of humility and passion, of savoir-faire, courtesy, education, cleanliness and style in relating to people.
The passion conveyed by the teacher can be summed up in a single sentence: “Serving is the supreme Art; God is the first servant. God serves men but he is not a servant of men” (Roberto Benigni in “Life is beautiful”).
A special thanks to the A.M.I.R.A Association, which participated with the same spirit of sharing the great value of this profession, in affiliating the 7 Filipino students, ambassadors for ICIF of this new course, who will now put into practice the new skills acquired in a 7 months internship in the best restaurants and hotels selected by the Institute.
